Coffee Biscuit

A recipe I use to make Coffee Biscuit, based off of a recipe from a recipe from a Final Fantasy XIV Cookbook by Victoria Rosenthal my friend owns.
I have substituted some ingredients for easier to find ones

Freshly Baked Biscuits

  1. In a small bowl, whisk together the espresso powder and hot water. In a different bowl, combine the all-purpose flour, whole-wheat flour, salt and baking powder.
  2. In a large bowl, combine the butter, white sugar, and brown sugar and mix until smooth. Add the eggs, Vanilla, and espresso powder mixture. Slowly mix in the flour mixture until the dough comes together. Fold in the chocolate chips.
  3. On two baking sheet with parchment paper, divide the dough into small balls and place them on the sheet with 2 inches of space between each. Gently press each ball down to make a thick disk. Place the sheets in the refrigerator for 1 hour.
  4. Scrape dough out onto a lightly floured work surface (you can use bread flour or all-purpose flour). Shape into a ball with a smooth, unbroken surface, using just enough flour on the surface to keep it from sticking. Transfer smooth-side down to banneton. Pinch together the rougher edges of the surface toward the center to smooth them and maintain the round ball shape.
  5. Preheat the oven to 450°F. Bake the cookies until they have slightly spread and the edges are golden, 15 to 20 minutes. Let the cookies completely cool.
